The title of this post is quite literal.
Taking walks has been proven to stimulate the mind. I've used them in the past to wake myself up (motion creates emotion), get new ideas (new brain synapses), think on life situations (movement in your body creates the same in your head), meet new people (you never know who you'll see), even for exercise on off-days from the gym (walking is enough for many humans to stay out of the hospital).
And, it's just a good change of pace from your normal routines.
